Lemonade Cake
(Joe's favorite)

Recipe from Diane, as served at the 2003 BBQ

1 pkg. Lemon cake mix
1 pkg. Lemon Instant pudding (has to be instant I tried regular once and yucckkky consistency)
4 eggs
1 c. water
¼ c. salad oil

Beat eggs until thick and add other ingredients and beat about 10 minutes at medium speed until thick.

Pour into a 13 x 9 inch greased and floured pan.

Bake at 350 F for 40 minutes.

Remove from oven and let stand about 5 minutes and then use a utility fork to poke holes in the top of the cake. The more holes the better.

Spread glaze on top.

GLAZE ---choose one

2 scoops of powdered Lemonade
½ c. water
2 Tblspn. Butter, melted
2 c. icing sugar Blend with a whisk or beaters

OR

1 6 oz can frozen lemonade (or use half of a 12 oz. Can)
2 c. icing sugar

OR

2 c. icing sugar and 1/3 c. lemon juice, bring to a boil and then let cool. ( I don't like this one as much as the others.)
